Spanish food offers a wide array of choices and ingredients to choose from. This disparity arises due to a conglomeration of cultures and the cosmopolitan culture that the Spanish people are so used to. Being surrounded by all sorts of water bodies and having a profound maritime history does have its impact on the local flavor of Spain and the food here is primarily Seafood. Fresh ingredients and healthy cooking is an integral part of Spanish food. With thousands of recipes and ingredients, Spanish food is bound to leave even the most ambitious of foodies spellbound. Most recipes are divided in to two different cults. In the Northern part of the peninsula, more animal fats are consumed, while in the Southern part of the peninsula, seafood and fresh tropical ingredients are more common- the nearness to the sea being one of the major reasons for this disparity.

Legumes, onions and Garlic form an integral part of a typically Mediterranean diet. Legumes are also lavishly used in most Spanish dishes. Right from the Roman era, consumption of animal fats has been more prevalent in the Mediterranean region as compared to consumption of vegetables and this fact stands apart in Spanish food as well. So be it the Gastronomía manchega, the Seafood Paella, Iberian pork embutidos or Asturian chuletillas, the use of animal fats has been profound and extensive in traditional and modern Spanish food.

Apart from meat and seafood, rice are also an important part of Spanish cuisine. More often than not, rice (normal or in a recipe) are served as a side dish along with a main course dish. Paella is the name given to saffron rice cooked with seafood or with chicken, pork or any other form of meat and owns its origin to the city of Valencia- also known as the birth place of Paella. Potato omelet or Tortilla de patatas is another famous breakfast meal that is a part of traditional Spanish food.

Regionally, Catalonia and Valencia are two of the most seafood loving districts of Spain. Besides seafood, Catalonia is home to some of the most authentic rice dishes that are a part of Spanish food. Sausages cooked in Catalan sauce and botifarra are two of the most famous dishes to have rolled out of Catalonia.

Txangurro relleno or spider crab is another famous recipe that owes its origins to Spain. Besides, some weird recipes based on octopuses and crabs are also a part of the Spanish cuisine. With the widest array of dishes, sauces and cremes, Spanish food is one of the most enticing food lineages in the world.
